How to Make Homemade Pizza by Chef Kelvin Fernandez

Total time 3 hours and 20 minutes
Yield
2 round pizzas
1 Large Sicilian Pizza
Dough
2 teaspoons of active dry yeast or instant yeast
1 1/4 cup of Luke warm water
2 Tablespoons of Olive Oil
3 cups of All Purpose Flour
1 1/4 Teaspoon of Salt
For seasoning Crust
olive oil
granulated garlic
dried oregano
dried basil
Toppings
Bacon egg and cheese pizza
5 slices of bacon cut and park cooked
shredded mozzarella cheese 1/2 cup
3-4 whole eggs
Margahrita Pizza
Fresh Mozzarella
Fresh Basil
Tomato Sauce (see chicken parm recipe, or use store bought)
Tomato Sauce
1 can of Plum tomatoes
1 small white onion
1 small shallot
4 garlic cloves
1 teaspoon of herbs of Italy (dried basil, thyme, parsley, basil)
1/4 teaspoon of red chili flakes
Directions
1- If you're using active dry yeast, dissolve it, with a pinch of sugar, in 2 tablespoons of the lukewarm water. Let the yeast and water sit at room temperature for 15 minutes, until the mixture has bubbled and expanded. If you're using instant yeast, you can skip this step and just add when starting dough.
2-Combine the dissolved yeast (or the instant yeast) with the remainder of the ingredients. Mix and knead everything together—by hand, mixer or bread machine set on the dough cycle—till you've made a soft, smooth dough. If you're kneading in a stand mixer, it should take 4 to 5 minutes at second speed, and the dough should barely clean the sides of the bowl, perhaps sticking a bit at the bottom. Don't over-knead the dough; it should hold together, but can still look fairly rough on the surface.
3- to make pizza right away place the dough in a lightly greased bowl, cover the bowl with plastic wrap and allow it to rise let it sit for up to 90 minutes. if it takes longer thats ok too just make sure its puffy and it rises.
4-if you are making pizza the next day after it rises just put in the refrigerator and let come to rest outside for about2 hours before using. this step allows more flexibility with the dough.
5-Decide what shape and thickness of pizza you want to make
