Moroccan Cous Cous
Serves 4
Cook time 2-3hrs
Ingredients:
500g lamb or beef
1 brown onion
1 large potato
2 large carrots
2 courgettes
4 wedges of white cabbage
2 tbsp tomato paste
Handful fresh parsley
1/2 tin of drained chickpeas
Olive oil
Spices (measure with your heart) or
1tsp ground ginger
1 tsp cumin
1 tsp ground coriander
1 tbsp paprika
1 chili
Salt and pepper
Cous Cous to serve
Method:
1. start by chopping all the veggies into batons or sticks. Dice the tomato and slice the onion thin.
2. Add oil to pan and heat. Brown the meat then remove from pan. Sauté the onion in the same pan then add back in the meat.
3. Now add all the veggies that take longer to cook. Potato and carrot. Add the spices, tomato paste, salt and pepper, chili and parsley.
4. Pour in enough water to cover. Cover with a lid and simmer for 2hrs. Until the meat is soft.
5. You can remove the potato and carrot after one hour if you don’t want them to be too soft. They will be added back in.
6. Once the meat is soft add in the chickpeas, cabbage and courgette. If you removed the potato and carrot now you can put back in the pan.
7. Cook for a further 30mins until veggies are cooked through.
8. Serve over cous cous and garnish with toasted almonds.
9. Extra sauce can be served on the side in a separate bowl.
