Pumpkin Cake

Pumpkin Sheet Cake 🎃

Tray size: 9x13”
Baking temp: 170c
12 slices

Ingredients:
200g white sugar
100g Demerara sugar
4 eggs (at room temp)
250ml vegetable oil
1 tin pumpkin puree (425g)
2 tsp vanilla essence
2 tsp cinnamon
2 tsp ground ginger
3/4 tsp salt
2 tsp baking powder
1 tsp bicarbonate of soda
250g all purpose/plain flour

Frosting:
150g unsalted butter (soft)
280g cream cheese (room temp)
280g icing/powdered sugar
1 tsp Vanilla essence
Method:

1. preheat oven to 170c
2. Mix together the flour, salt , baking powder and bicarbonate of soda.
3. In a separate bowl add the sugar, oil, eggs and pumpkin purée. Mix well.
4. Now mix in the vanilla essence and spices.
5. Gradually add the flour mixture and fold in until fully combined.
6. Pour cake mix into lined and lightly oiled baking tray.
7. Bake in middle shelf for 25-30mins or until toothpick comes out clean.
8. Remove from oven and leave to cool fully either in the pan or transfer to wire rack.
9. While the cake is cooling mix together all of the frosting ingredients. Until smooth and light in texture. Electric hand mixer is helpful.
10. Cover and place in the fridge until the cake has cooled.
11. Smooth over the frosting and serve.
