Banoffee Pie

Ingredients for 8inch round tin:

200g digestive biscuits or 12-14 biscuits
80g melted butter

2 large ripe medium bananas
1 tin condensed milk (alternatively use ready made caramel)
300ml double cream or whipping cream
2-3 squares of milk chocolate for decor

Method:

For the caramel:
1) pour 1 tin condensed milk into small oven proof dish. Cover with tinfoil and place in water bath. Heat in oven for around 40mins at 190c. Until it turns golden brown.

2) remove from oven and whisk. If there are small lumps don’t worry you won’t notice these when eating.

3) set aside to cool

For the pie:
1)Crush or blend your biscuits into a fine crumb and mix in the melted butter.

2) pour into your tin and press down firmly and make sure the surface is even.

3) pour the caramel on top of the biscuit in another even layer.

4) place into fridge while you chop your bananas and whip your cream.

5) layer the banana on top of the caramel and top with the whipped cream.

6) grate over some chocolate for decoration and leave in the fridge for a couple of hours or over night.

7) serve and enjoy 😊
