Promo for Recipe.TV’s Katie Parla’s Roman Kitchen, a series shot in, you guessed it, my kitchen in Rome. This episode, which will air on December 10, 2021 celebrates the artichoke, one of the city’s most celebrated ingredients. I prepare carciofi alla romana (artichokes simmered with garlic, oil, and herbs until soft), a twist on gricia (pasta with guanciale, Pecorino Romano, and black pepper) with artichokes, carciofi infarinati (fried artichoke wedges), and a cocktail made with artichoke liqueur.
