Easy Brownies with Only Cocoa powder

Easy Brownies with only cocoa powder – Someone requested this cake and I thought it’s pretty interesting. Without the regular chocolate bar, we are only relying on the cocoa powder and flour in this cake. The challenge is how to get it fudgy at the same time? Firstly, mix using an electric mixer on a high speed so that the batter is thoroughly mixed. Secondly, do not over bake. I only bake it for about 25 minutes, and it’s just nice because we do not want it to be cakey. If you like it more fudgy or gooey, bake at a shorter time. You can always check with a skewer, if it doesn’t come out clean, that means it’s fudgy. If it comes out clean, it’s cakey. I did both versions, they both turned out amazing. Ingredients:
8x8x3 inch pan

150g [1 cup + 2½ tbsp] unsalted butter
180g [¾ cup + 2 tbsp] caster sugar
3g [½ tsp] salt
90g [¾ cup] cocoa powder
80g [½ cup] walnuts, chopped
60g [½ cup] all-purpose flour
4g [1 tsp] baking powder
2 large eggs***
1 tsp vanilla extract

***Egg replacement:
120g [½ cup] whole milk
+ 1 tbsp white vinegar

Instructions:
1. Preheat oven at 180°C/348°F.
2. In a large mixing bowl, add butter, sugar and salt. Place the bowl over a pot of hot water.
3. Mix the mixture until the butter is all melted.
4. Add in the cocoa powder. Mix until well combined. Remove the bowl from the hot water pot. Set aside for cooling.
5. Meanwhile, chop the walnuts. Set aside.
6. Mix the flour and baking powder in a small bowl. Set aside.
7. Once the chocolate mixture is cool, add in the eggs***, one at a time. With an electric mixture, mix on high speed for about 1 minute until well combined.

***[Remark] For egg replacement: pre-prepare to mix the milk and white vinegar. Let it rest for 5 minutes.

8. Add in the vanilla extract. Mix until well combined.
9. Add in the dry ingredients. Mix for about 2 minutes on high speed until well combined. This is so that we could get a fudgy texture.
10. Fold in the walnuts.
11. Transfer to a 8x8x3 inch prepared pan, greased and lined with parchment paper.
12. Bake in preheated oven at 180°C/348°F for 25-30 minutes. If you like it more fudgy or gooey, bake at a shorter time. You can always check with a skewer, if it doesn’t come out clean, that means it’s fudgy. If it comes out clean, it’s cakey.
13. Let it cool before slicing.
