Matcha (Japanese Green Tea) Swiss Roll Cake Recipe

Matcha (Japanese Green Tea) Swiss Roll Cake Recipe. A soft and light cake dessert. This is a request from my aunt. She is whom I learned how to make butter cake from. Out of the blue, she requested me to bake a swiss roll, how can I say no :) Without hesitation, I gave it a try. So, this is my first attempt making one. I wasn't sure if I know how to roll the cake or it might have cracks here and there. I had some struggles rolling it as the rolling part will depict the success of this cake. So, I did it quite slowly and gently. It turned out to be not too bad. Hope you'll try too or at least enjoy the video.

Ingredients:-
1 tbsp matcha (green tea) powder
1 tbsp hot water
3 egg yolks (large eggs) or 4 egg yolks (medium eggs)
20 g fine sugar
45 g corn oil
60 g cake flour (low protein flour)
1/2 tbsp milk powder

3 egg whites (large eggs) or 4 egg whites (medium eggs)
1/4 tsp cream of tartar
60 g fine sugar

Fillings:
100g whipping cream
1/4 cup Red beans (optional)

9x13inch baking pan

Instructions:
1. Preheat oven 320°F/160°C.
2. In a small bowl, mix green tea powder with hot water. Mix well.
3. In a large bowl, add 4 egg yolks and sugar. Mix until the sugar disappear. Then add corn oil.
4. Sift the flour and milk powder into the batter. Combine them well until the flour disappear.
5. In another large bowl, add 4 egg whites. Beat on low speed until you see some bubbles. Then increase to medium speed. Add in the cream of tartar, and continue beating until stiff peak forms.
6. Fold in the batter and the egg white together. Fold a little of egg white into the batter so that the green batter become of liquid, and fold all of this mix into egg white. Fold them gently until well combined. Do not over mix.
7. Pour the batter into the baking pan. Try to flatter it with the spatula. Give it a few taps to release the air bubbles.
8. Bake it in a water bath at 320°F/160°C for 18-20 minutes until the top is lightly brown.
9. Cool the cake for about 10-15 minutes.
10. Beat the whipping cream until stiff peak forms.
11. Put a layer of the whipping cream and some red beans on the cake. Gently roll the cake. Once the cake is rolled, wrap it with a cling firm or a parchment paper. Refrigerate for at least 1 to 2 hours before slicing.
