做出成功的戚风蛋糕 你只需要这一个教程 Chiffon Cake Recipe

戚风蛋糕也被烘焙爱好者戏成为”气疯“蛋糕,是很多刚接触烘焙的人想要攻克的一款甜品。其实制作戚风蛋糕的过程一点都不复杂,但是因为戚风蛋糕很娇弱,制作它要注意一些细节,从制作手法、模具选用到烘焙的温度时间,每个细节都不可忽略。本期视频详细跟大家讲解了这些要点,详细只要你能注意到这些细节,就能制作出成功的戚风蛋糕啦。

食谱,6寸 (8寸配方请往下拉)
鸡蛋3个,带壳55-60g,蛋清总重量85-90g之间为宜
油(玉米油或其他味道不重的油)35g
牛奶 40g
低筋面粉 50g(不建议用中筋面粉,尤其是新手)
糖 45g(不喜甜可减至40g,新手不建议减糖)
柠檬汁或白醋 2g

模具:6寸圆形铝制阳极活底模具。*不可使用不粘模具,模具中不可垫纸或涂油*。
烤制:提前充分预热烤箱,130摄氏度/270华氏度,上下火,先烤60分钟,再转150摄氏度/300华氏度烤10分钟左右。*具体烤温烤时要看烤箱调节*

8寸配方:
鸡蛋5个
油 58g
牛奶 66g
低筋面粉 83g
糖 75g
柠檬汁或白醋 4g

烤温:130摄氏度/270华氏度先烤70分钟,再转150摄氏度/300华氏度烤10分钟左右。*具体时间烤温要根据自己烤箱调整*

Recipe(for a 6 inch cake)
3 Large eggs(US Grade), averaging 55-60g each with shell.
Oil 35g(use flavorless oil like corn oil or canola oil)
Milk 40g
Cake Flour 50g(AP flour is not really recommended especially for beginners)
Granulated Sugar 45g(you may reduce it to 40g if you prefer less sugar, for beginners, do not reduce the sugar)
Lemon juice or white vinegar 2g(about 1/2 tsp)

Cake Pan: Use 6 inch aluminum pan with removable bottom, do not use nonstick pan. Do not use nonstick spray or any paper lining inside the pan.
Bake: Preheat the oven in advance. Bake at 130°C/270°F for 60 minutes first , then bake at 150°C/300°C for another 10 minutes. *Make sure to adjust the baking time and temperature according to your own oven*

Recipe for an 8 inch cake
5 large eggs
Oil 58g
Milk 66g
Cake Flour 83g
Granulated Sugar 75g
Lemon juice or vinegar 4g

Bake at 130°C/270°F for 70 minutes first , then bake at 150°C/300°C for another 10 minutes. *Make sure to adjust the baking time and temperature according to your own oven*
