Water boiled fish with chili oil | 水煮鱼 | Cooking Ah Pa

Water Boiled Fish with Chili Oil. This is a popular szechuan dish, usually using fish or beef slices, boiled under spicy broth.

Ingredients:
300g of Barramundi fish slices (marinate with salt, white pepper, thick corn-starch solutions)
Some fresh corianders (to garnish)

Soup Base Ingredients:
1 bowl of chicken stock (Ah Pa’s homemade chicken stock mix with water)
Some Chinese cabbage, cut into big chunks
Some ginger slices
Pinch of salt (to season)
Few dashes of white pepper (to season)
A little bit of Shao Hsing cooking wine (to season)
Few drops of Ong Ky premium fish sauce (to season)
A little bit of abalone sauce, optional (to season)

Chili Oil Ingredients:
1 small hand full of dried chili, cut into half and remove the seeds
Some ginger slices
1 teaspoon of chopped garlic
1 tablespoon of chili powder mixed with 1 tablespoon of SzeChuan peppercorn powder
2-3 tablespoons of Lee Kum Kee chili oil
