My best steamed fish with fermented bean paste | 酱蒸鱼

Steamed fish with fermented bean paste is a very commonly found method of steaming fish. It's basically making a sauce using some fermented bean paste (taucu) mixed with some curry paste together with tomato sauce, giving it a sourish and yet savoury flavour. Most commonly found to use this method to steamed tilapia fish.

Ah Pa’s The Best Jiang Zheng Fish (Steamed Fish with Fermented Bean Paste)
Ingredients:
1 Siakap fish head, season with some salt
A few slices of ginger (put on top of the fish head)
Some fresh corianders (to garnish)

Sauce:
3 red fresh chilies
2 small ginger cubes
2 cloves of garlic
2 cloves of shallot
3 tablespoons of
1 tablespoon of sour plum sauce
1 tablespoon of fermented soy bean paste
1 small bowl of chicken stock (1 teaspoon of Ah Pa’s homemade chicken powder mix with hot water)

Seasonings:
Pinch of salt
Pinch of sugar
