You've probably eaten twice-baked potatoes before, but probably never quite like this! Stuffed to the brim with spinach, tomatoes, corn, and protein-rich beans, then topped with plenty of cheese, this is the perfect side dish for any occasion. Turn your potatoes into super spuds!

_Ingredients:_

- 3 baking potatoes, halved
- 1 red onion, diced
- 10 cherry tomatoes, chopped
- 1–2 tbsp canned corn
- 1–2 tbsp kidney beans
- 2 oz spinach, cooked
- 3 tbsp olive oil
- salt & pepper
- 2 cups shredded cheese

_Bake the stuffed potatoes at 400°F for 20 minutes._
