Kare Kare- Ox Tripe and Ox Tail

Ingredients

1 kg ox tripe cut into cubes
1/2 kg ox tail
60 ml vinegar
2 pcs bay leaf
Garlic
Onion
1 teaspoon peppercorn
Mama Sita’s Kare Kare mix
5 tablespoons peanut butter
Achuete powder - optional
Kare kare vegetables

Notes:

To eliminate the unpleasant smell and taste of the ox tripe, it is necessary to soak them in vinegar and water for 20 minutes.
After soaking, wash the tripe at least twice. Put water enough to cover the tripe and ox tail and bool for 3 minutes.
Remove from heat and rinse the tripe and tail until there is no more scum.
Put the tripe and ox tail back in the pot and boil until tender.
