Steam and Roast Lechon Kawali

Using steam to roast the pork belly ensures the meat is soooo tender but the skin is crisp and crackingly good!
Instructions:
Rub the skin with olive oil and sprinkle rock salt on top.
In a preheated oven, place the pork on top of a roasting pan with water and cook at 130 degrees Celsius for 2.5 hours.
Increase the heat to 200 degrees Celsius and cook pork for 20 to 30 minutes until the skin is crispy.
Take the pork out of the oven and let it rest for 20 minutes before slicing into serving pieces.
