HOW TO COOK YUMMY CALLOS PINOY STYLE
INGREDIENTS:
3 tbsp - olive oil
1 cup - long red chili
150 grams - smoked bacon
1/3 cup - garlic
2 tbsp - spicy chilis ( + 6pcs for garnish)
1 heapful cup - white onion
100 grams - Chinese Chorizo or CHORIZO DE BILBAO
1 tsp - ground black pepper
50 grams - chicken sausages
1 heapful tablespoon - spicy chili powder (optional)
250 grams - tomato sauce
350 grams - BEEF TRIPE
350 grams - TROTTER
2/3 cup - carrots
2/3 cup - canned chick peas
*** Beef tripe & trotter STOCK
1 pc - beef cube
2 stalks - spring onion

PARBOIL:
Water - enough to submerge all ingredients
2 pcs - bay leaves
1 tsp - black peppercorns
1/2 cup - vinegar
*** beef tripe & trotter

COOKED in PRESSURE COOKER
***beef tripe & trotter
1 stalk - leek
2 pcs - bay leaf
1 tbsp - ground black pepper
Water - 4 cups above ingredients level

Cooking time: approximately 4 hours (can shorten time to 2 hours if cook longer in pressure cooker)
Serving: 5+ people
