With tender blocks of tofu draped in a fiery meat sauce straddling the perfect málà (麻辣) balance of tongue tingling and spicy, this Mapo Tofu recipe (麻婆豆腐) is my favorite tofu dish ever. I’m also going to show you an easy trick to prevent tofu from watering down your stir-fries. For vegans, you can substitute veggie stock for the chicken stock, and minced shiitake mushrooms for the pork to make a plant-based Mapo Tofu. #tofurecipe #sichuanfood #spicyfood

Mapo Tofu (麻婆豆腐)

Makes 3 servings

INGREDIENTS
400 grams soft tofu (drained and cut into 3/4” cubes)
1/2 cup low-sodium chicken broth
2 teaspoons potato starch
1 teaspoon sesame oil
2 tablespoons vegetable oil
9 grams douchi (~1 tablespoon fermented black beans, roughly chopped)
2 gram Sichuan pepper (~2 teaspoon ground)
24 grams garlic (2 extra large cloves, minced)
20 grams ginger (1-inch piece, minced)
50 grams scallions (white part only minced)
2 tablespoons doubanjiang (to taste)
150 grams ground pork
