Cooking With Cathy- Roasted Root Veggies
Ms. Cathy from Holy Cross Health FL held an online demonstration on how she makes a side dish of roasted root vegetables.
INGREDIENTS:
- 2 Large Carrots
- 2 Medium Parsnips, peeled
- 1 Medium Red Onion
- 1 Medium Sweet Potato
- 3 Tbsp. Extra-Virgin Olive Oil
- 1 1/2 Tsp. Apple Cider Vinegar or Balsamic Vinegar
- 1 Tbsp. Fresh Herbs (Rosemary, Sage, or Thyme)
- 1/2 Tsp. Kosher Salt
- 1/2 Tsp. Ground Pepper
