Cooking With Cathy- Creamy Spinach Dip
Ms. Cathy from Holy Cross Health FL held an online demonstration on how she makes a healthier creamy spinach dip.
INGREDIENTS:
- 1 Small Shallot, peeled
- 1 5-Ounce can of Water Chestnuts, rinsed
- 1/2 Cup Reduced-Fat Cream Cheese
- 1/2 Cup of Low-Fat Cottage Cheese
- 1/4 Cup of Nonfat Plain Yogurt
- 1 Tbsp. of Lemon Juice
- 1/2 Tsp. Salt
- 6 Ounces of Baby Spinach
- 2 Tbsp. Fresh Chives, chopped
- Freshly Ground Pepper to Taste
