RECIPES:

Avocado Toast: Just make it as I demonstrated. For the hard boiled eggs do the following: Cover eggs in water on stove top. Heat to a boil. When water begins boiling, turn off burner and set timer for 20 minutes. After 20 minutes, strain off the water and give eggs an ice bath.

One Pot Dutch Oven Breakfast:
1 lb. meat
1 doz. eggs
1 bag shredded potatoes
2 cups cheese
mushrooms, peppers, onions optional
Saute meat in the bottom of a dutch oven until brown. Remove meat and saute potatoes and peppers until soft and slightly carmelized. In the meantime whisk together eggs with a splash of milk or cream. Add whatever seasonings you would like. I use paprika, celery salt, season salt, salt and pepper. Top potatoes with meat and pour egg mixture over everything. Top with Everything But the Bagel Seasoning. Bake in the oven at 350° for about half an hour. (If you don't have a Dutch oven just use a baking dish. When eggs look almost set sprinkle with cheese. Leave casserole in oven til eggs are set and cheese is melted. Enjoy!!

Best Baked Oatmeal:
¾ c. sugar
¾ c. brown sugar
½ c. vegetable oil
4 eggs
4 tsp. baking powder
2 tsp. salt
½ tsp. cinnamon
2 c. milk
6 c. oatmeal
1 c. raisins, blueberries, diced apples, peaches, or chocolate chips (all optional)
Mix first 4 ingredients until smooth. Add rest of ingredients in order. Mix well. Pour into a greased 9x13 pan. Bake at 350° for 30 minutes or until light brown over the top. Serve warm with milk.

German Pancakes with Buttermilk Syrup:

Hot Pockets:
Make your favorite pizza or soft pretzel dough. Fill with toppings, crimp together edges and bake in oven just until dough is baked and a pale golden brown. Here's how we did the soft pretzel version:

Soft Pretzel Dough:
1 tbsp yeast
3/4 c. warm water
1/4 c. brown sugar
1/2 tsp. salt
1 1/2 occident flour
4 tsp. soda
1 c. water
pretzel salt
melted butter.
First make the dough. Dissolve yeast in warm water then mix in sugar, salt, and flour. Let rise 15 min. do not punch down. Divide dough into small portions. Roll into a circle. Top with scrambled eggs, cheese,, and other toppings. Fold over and close in a half moon shape. Mix soda and water; dip hot pockets in soda water mixture. Place in a pan and sprinkle with pretzel salt. Bake at 350° until a light golden brown. Remove from oven and brush with melted butter. Freeze when cooled. To reheat, thaw in fridge overnight. Toast on top of toaster or in toaster oven. If middle is still cool, rip open and place in microwave for a couple seconds to finish it off. Serve with mustard, ketchup, or salsa.

Waffles:
2 c. flour
2 tbsp. sugar
1 tbsp. baking powder
1/2 tsp. salt
1 3/4 c. milk
1/3 c. oil
2 lg. eggs
Mix everything together. Batter will be slightly lumpy. Fry in a waffle iron. To reheat, toast in the toaster.

Make Ahead Sweet Potato Hash:
2 sweet potatoes
1 doz eggs
cheese
meat
spinach, mushrooms, veggies
Seasonings as desired.
Brown meat.
Make sweet potato ribbons. Saute in leftover meat grease with some salt, and pepper, rosemary, and thyme.
When ribbons are slightly carmelized, arrange around the edge of a 9x13 pan. Pour whisked eggs in the middle. Top with bacon, spinach, or other ingredients. Sprinkle with cheese and spice blend (season salt, paprika, celery salt, salt and pepper.) Sprinkle sweet potatoes around edges on the sweet potato ribbons. This dish looks so pretty!
Bake in the oven at 350° until eggs are set and don't look wet anymore. Top with more cheese.
