Lentil, Sausage and Kale Soup Recipe
by Faith and Flour

1 Onion, chopped
2 sausage links, diced (I use Trader Joe's Chicken Sausage)
1 Tbsp Olive Oil
2 tsp Garlic, minced
6 cups Vegetable Stock
1 cup Lentils, rinsed
8 oz. Kale, chopped (or more if desired)

Sauté the onions and sausage with the oil over medium heat until the onions are tender and the sausage has started to brown (3-5 minutes). Add garlic, broth and lentils. Bring to a boil and stir in the kale. Cover and simmer for 40 minutes or until the beans are tender.
