Chicken Taco Soup
By Faith and Flour

1 Onion, diced (I used dried minced onions for freezer meal)
1Tbsp. Olive Oil
2 cups Chicken or Vegetable Stock
1 can Diced & Fire Roasted Tomatoes
1 can Corn (undrained)
1 can (4 oz.) Green Chilies
2-3 cans of beans (Black, Pinto and/or Kidney)
1 Tbsp. Chili Powder
1 tsp. Cumin
2 Chicken Breasts (frozen is fine!)
3-4 tbs Ranch Dressing Mix (optional - see recipe below)

Slow Cooker Instructions:
Sauté the onions in the olive oil until translucent. Add the onions and all other ingredients to the crockpot.
Set the crockpot on Low for 6 hours or High for 4 hours.
Remove the chicken breasts and shred with two forks.
Return to the crockpot and stir into the soup.

Instant Pot Instructions:
Sauté the onions in the olive oil until translucent using the Sauté setting. Add all other ingredients to the instant pot. Be sure that the instant pot valve is set to “sealing”.
Set the instant pot on Pressure Cook for 25 minutes (35 if cooking from frozen).
When the cooking time is complete release the pressure.
Remove the chicken breasts and shred with two forks.
Return to the instant pot and stir into the soup.

Top with avocados, cheese, sour cream or your family’s favorite toppings. Enjoy!

Ranch Dressing Mix

1 cup powdered Buttermilk
2 tbs dried Parsley
2 tsp dried Dill
2 tsp Onion Powder
2 tsp dried minced Onion
2 ts Salt
1 tsp Garlic Powder
1/2 tsp fresh ground Pepper
Combine all ingredients in a blender and mix on high until combined. Store in a mason jar with lid in the refrigerator.
{To Make Ranch Dressing combine 1 tbs of the Ranch Mix, 1 cup Milk and 1 cup Mayonnaise.}
