Italian Meatloaf (Gluten Free)
by Faith and Flour

2 lbs Ground Beef
1 cup ground gluten free Oats
1/2 cup Whole Milk
3 Eggs
2 Tbs dried, minced Onion
1/4 cup Parmeasan cheese, grated
4 Tbs Basil, finely chopped
2 Tbsp Oregano, finely chopped
1 tsp Salt
1/4 lb Pancetta or Bacon, thinly sliced

Preheat oven to 350 degrees F.
Grind the oats into a coarse flour using your blender or food processor. Add the milk, eggs, onion, cheese, herbs and salt. Mix gently by hand or using a stand mixer just until the ingredients are well incorporated. Shape the meat into a loaf and place on a foil lined pan that is well oiled or use non-stick foil. Arrange the pancetta slices over the top of the meatloaf. Loosely cover the meatloaf with foil and bake for 40 minutes. Uncover and bake for about 30-40 minutes more or until the internal temperature reaches 160 degrees F. Allow the meatloaf to cool for 10 minutes before slicing.
For muffins: Use a non-stick muffin pan. Fill with the meatloaf mixture, top with bacon bits and bake for 20-30 minutes uncovered until the internal temperature reaches 160 degrees F.
