Keto vegan cauliflower fritters and creamy tartar sauce
These keto vegan cauliflower fritters are so addictive I’ve been making them weekly. The rich and creamy vegan tartar sauce goes so well with them. The combination is perfect for a weekend lunch, or any lunch OR dinner :)

CAULIFLOWER FRITTERS
------------------------------------
(makes approx 10 fritters)
1 medium cauliflower (2 cups finely cooked/chopped cauliflower)
1 cup ground almonds
2 tbsps psyllium husk powder
2-3 spears of spring onions (coarsely chopped)
1-2 cloves of garlic (finely chopped)
Salt and pepper to season
1. Poach cauliflower till tender and chop finely (along with garlic)
2. Mix all ingredients together and add seasonings.
3. Divide mixture into approx 10 portions and shape them into individual patties.
4. Fry the patties with a generous amount of coconut oil in low/medium heat till golden brown on both sides. Rest for 5 mins before serving.
VEGAN TARTAR SAUCE
--------------------------------------
3-4 tbsps Coconut milk yoghurt
1 avocado (chopped)
5-6 gherkins (chopped)
1 tsp vinegar
Salt
Chives to garnish
Mix all ingredients together and garnish with chopped chives.
Enjoy x
