This recipe was created in 1925 in Oloron-Sainte-Marie. The biscuit is a cross between Dacquoise and success in which is enclosed a buttercream base praliné filling. As ingredients matter, what gives the gateau Russe such a distinctive aroma and flavor is the use of the almonds grown in Provence in southern France; known to be the best.
