Korean Raw Red Onion Pickle by Omma's Kitchen

Ingredients:
3 pounds of organic red onion (Smaller the better)
3 cups of water
1 cup of vinegar
1/2 cup of sugar
6 -7 tablespoon of salt
Optional: Dry red pepper
Optional: Red cabbage, thinly sliced
Optional: Ginger, thinly sliced
Optional: Garlic, thinly sliced
Optional: Radish or Daikon, thinly sliced

I like to keep brine purple to use it in salad dressing so soy sauce was not added.

FYI: Onions in general are good for us, but red onions have a higher concentration of flavonoids in the outer layers can help reduce the risk of cancer, heart disease, and diabetes. Red onions also contain the brain-boosting flavonol quercetin, which helps keep memory in tip-top shape.
