RECIPES
HEALTHY ALMOND PULP COOKIES
- 1 cup almond pulp* (get it as dry as possible by mixing with spoon, as shown in video) / If you don’t have almond pulp, you can replace with 1/2 cup almond butter
- 1 cup shredded coconut
- 1/3 cup maple syrup
- 1 egg or chia egg*
- 2 tsp cinnamon
- 1 tsp vanilla
- 1/2 cup oats* (slightly more / less depending on how wet your pulp is)
- Optional: pumpkin spice, chocolate chips, raisins…
*You can also use almond pulp you get from using a nut milk bag, like this - https://amzn.to/2GXM5da Again if you don’t have almond pulp, you can replace with 1/2 cup almond butter
*Chia egg = 1 tablespoon of chia seeds mixed with 3 tablespoons of water and let the mixture sit for 15 to 20 minutes or you can prepare it the night before
*The amount of oats used can vary slightly depending on how wet your pulp is. Aim for the consistency shown in the video :)
Directions:
- Set oven to 180’C / 350’F
- Mix all ingredients
- Bake 20 mins, until top is golden / dry to the touch
- Flip, back another 10/15 mins

INDIAN VEGGIE COCONUT CURRY
- 1 tbsp coconut oil
- 1 medium onion
- 3 cloves garlic
- 1 thumb size fresh ginger, peeled & grated
- 1 red bell pepper, chopped
- 1 zucchini, cubed
- 1 medium cauliflower (half)
- 3 tsp curry powder
- 2 tsp veggie stock powder
- 1 can coconut milk
- 1 can chopped tomatoes
- 1/2 cup water
Directions:
- Fry onion, garlic and grated ginger in coconut oil for a few minutes
- Add in rest of ingredients
- Allow to cook until veggies are tender
- Top with fresh lime juice, chopped cilantro, alongside brown rice (or quinoa)
