Ingredients for marinade:
125g hoisin sauce
125g sesame paste
125g fermented red tofu
1 tbsp Chinese five spice
1kg pork neck, shoulder or fillet - sliced into equal pieces
For the glaze:
100g caster sugar (or fine sugar)
200g water
1 tbsp maltose (or honey)
Salt / pepper to season
Method:
1. Mix all the marinade together in a bowl and rub generously over the pork. Leave to marinate overnight or up to 12 hours.
2. Pre-heat the oven to 210c and place the pork on a wire rack with a tray underneath to catch any drips.
3. Roast the pork for 30-35 minutes or until the edges are slightly blackened and crispy. If it's getting too burnt, turn the heat down to 180c and cook until the internal temp of the meat is at least 73c.
4. Heat up the glaze ingredients together in a saucepan and brush over the roast pork generously. You can dip the pork into the glaze for extra sweet sticky pork.
5. Rest the meat for 20 minutes then slice away.
6. Serve with rice, noodles, salad, whatever you fancy!
