Here's a delicious Palak Sweet Corn recipe – a creamy, mildly spiced dish that pairs well with roti, naan, or rice.

Ingredients:
For the Spinach Puree:
2 cups, 1 bunches spinach (palak), washed and chopped
1 green chili
1 small piece of ginger
1 clove garlic
½ cup water
For the Main Dish:
1/2 cup sweet corn (boiled or steamed)
1 tablespoon oil or butter
½ teaspoon cumin seeds
1 small onion, finely chopped
1 tomato, finely chopped (or 2 tbsp tomato puree)
1 teaspoon coriander powder
½ teaspoon turmeric powder
½ teaspoon red chili powder (optional)
½ teaspoon garam masala
¼ cup fresh cream (optional, for richness)
Salt to taste
Water as needed
Instructions:
1. Make the Spinach Puree:
Boil water in a pan, add spinach, and blanch for 2 minutes.
Drain and immediately transfer to ice-cold water to retain the green color.
Blend the spinach with green chili, ginger, garlic, and a little water into a smooth puree. Set aside.
2. Cook the Masala:
Heat oil or butter in a pan, add cumin seeds, and let them splutter.
Add chopped onions and sauté until they turn golden brown.
Add chopped tomatoes (or puree) and cook until soft.
Add coriander powder, turmeric, red chili powder, and salt. Cook until the masala releases oil.
3. Add Corn and Spinach:
Add the boiled sweet corn and mix well.
Pour in the prepared spinach puree and stir.
Add water if needed to adjust the consistency. Simmer for 3-4 minutes.
4. Finish the Dish:
Add garam masala and mix well.
Stir in fresh cream for a creamy texture (optional).
Simmer for another 1-2 minutes and turn off the heat.
Serving Suggestions:
Garnish with fresh cream or grated paneer.
Serve hot with roti, naan, or jeera rice.
