How to make Daifuku 雪媚娘 (Xue Mei Niang)

[Recipe]
*approximately 12 two-inch size Daifuku
INGREDIENTS:
1. 65g glutinous rice flour
65克 糯米粉
2. 15g corn flour
15克 玉米淀粉
3. 30g castor sugar
30克 细砂糖
4. 90ml milk
90毫升 鲜奶
5. 15g unsalted butter
15克 无盐黄油
6. 150ml whipped cream
150毫升 鲜奶油
7. 30g powdered sugar
30克 糖粉
8. 1 whole mango
1颗 芒果 (切片)
9. 30g oreo crush (optional)
30克 奥力奥 饼干碎
STEPS:
1. Combine sugar, sifted glutinous rice flour (50g) and corn flour and milk, strain the mixture to remove lumps.
细砂糖,50克糯米粉,玉米淀粉和鲜奶混合。搅拌均匀然后过筛。
2. Steam the mixture in high heat for 15 minutes. *Do remember to cover with a lid while steaming* When it is done, add in unsalted butter until well combined and keep it refrigerated for 30 minutes.
将面糊蒸至15分钟 *记得盖上盖子*,加入黄油搅拌均匀,冷藏备用。
3. Combine whipped cream and powdered sugar, beat to stiff peaks. Transfer to a piping bag and keep it refrigerated.
鲜奶油加入糖粉打发至硬性发泡,装入挤花袋后冷藏备用。
4. Cook 15g glutinous rice flour in low heat till color turns light yellowish.
糕粉: 用小火炒15克糯米粉至微黄色。
5. Cut 1 mango into small cubes.
一颗芒果切成小块。
6. Cut the dough into 12 pieces, roll pieces into wraps. Note: Sprinkle some fried flour while rolling to avoid stickiness
把面团切成12块, 搓揉成面皮。搓揉时撒上少许糕粉防粘。
7. Use a small round object as a mould. Stuff the wraps with whipped cream and mango cubes/Oreo crush. Wrap it by pinching the edges together, twist to seal and remove excessive. Finally dust with some fried flour.
用小碗或圆勺为模型,包入鲜奶油和芒果/奥利奥饼干碎。把多余面皮去除,撒上少许糕粉防粘。
