Ingredients:
For Dough:
2 cups Refined flour
1 cup Whole wheat flour
Salt to taste
Water as required
¼ tsp Turmeric powder
1 tbsp Oil
For Stuffing:
2 cups grated coconut
1 cup Jaggery
3 tablespoons of water
1 tbsp Ghee
¼ tsp Cardamom powder
A pinch of Nutmeg powder
Instructions:
For Dough:
In a medium bowl, gently combine refined flour, whole wheat flour, salt, turmeric powder, and a drizzle of oil. Mix the ingredients together until they form a harmonious blend. Gradually add water to the mixture and knead the dough until it becomes soft and pliable. Apply a gentle layer of oil to the dough, covering it evenly, and set it aside, allowing it to rest for at least 30 minutes.
For Stuffing:
Heat a pan over medium flame and add water and jaggery. Allow the jaggery to melt completely, stirring occasionally. Continue cooking the jaggery mixture until it thickens slightly. Next, add grated coconut, a pinch of nutmeg powder and a sprinkle of cardamom powder to the pan. Mix the ingredients together until they are well combined. Add a touch of ghee to the mixture and blend until smooth. Let the mixture cool down completely. Once cooled, shape the mixture into golf-sized balls and set them aside, ready for use.
For making Stuffed Bread:
To flatten the bread, use a parchment paper or a banana leaf, as using a tortilla presser or a rolling pin can be quite challenging. The delicate stuffing might spill out or stick to the presser or the pin.
Apply a teaspoon of ghee on the parchment paper or Banana leaf, then gently place a small ball of dough on it. Fill the dough with the prepared coconut mixture and carefully close the edges.
Place the filled dough on the banana leaf and gently flatten it using your hands.
