Flaky, Crispy, Cheesy-Peasy Stuffed Puffs : Paneer Mattar Kachori 🫛😋

As I sit here, surrounded by the comforts of my kitchen, my mind wanders back to the carefree days of childhood. A smile spreads across my face as I recall the simple joys of saving pocket money, carefully allocated by my father, and pooling it with my brother's, to create a treasure trove of treats.

The anticipation would build, and finally, the day would arrive when we'd make our way to the school tuck shop, our hearts racing with excitement. The vendor's warm smile would greet us, and we'd eagerly exchange our hard-saved coins for a few precious kachoris.

The first bite would transport us to a world of flavor and delight, the crispy, flaky exterior giving way to a soft, savory interior. It was more than just a snack – it was a celebration of childhood, of simplicity, and of the joy of sharing moments with loved ones.

As I recreate this beloved recipe in my own kitchen, the aromas and flavors transport me back to those idyllic days. The kachoris, filled with the creamy richness of paneer and the sweetness of peas, evoke memories and emotions. This recipe remains a timeless delight! 😍

Ingredients:

For the dough:

1 cup all purpose flour
1 cup whole wheat flour
1 tbsp chickpea flour
Salt to taste
2-3 tbsp Ghee
Water as required

For Ginger Green Chili Paste

1 inch Ginger (peeled)
2 Green chillies
Pound these two into a coarse paste

For Filling

1/2 cup onion chopped
2 cups crumbled paneer (Cottage Cheese)
1 cup fresh / frozen peas
1/4 cup yellow bell pepper
1/4 cup red bell pepper
1/4 cup orange bell pepper
1 teaspoon red chilli powder
2 teaspoons coriander powder
1/2 teaspoon roasted cumin
1/2 teaspoon all spice powder
1/4 teaspoon back pepper
Salt to taste

Yogurt dip:

1/2 cup plain yogurt (beaten until creamy)
1 tablespoon powdered sugar
A pinch of salt

Instructions:

Prepare a smooth dough by combining all purpose flour, wheat flour and chickpea flour along with salt and ghee. Rest it for 30 minutes.

In a large pan, heat oil and saute the onions until translucent. Add the peas, crumbled paneer, colored bell peppers, ginger chilli paste and all the spices mentioned above and mix well. Sauté until they are well combined and fully cooked. Set them aside.

Make golf sized dough balls and roll them out into 5 inch circles. Place 1 teaspoon of cheese and a tablespoon of filling in the center of each dough circle. Fold the dough in half to form a half-moon shape, pressing the edges together to seal. Use the tines of a fork to crimp the edges.

Fry the Kachori in hot oil. Get your kachoris golden and gorgeous by frying them until crispy.

Yogurt Dip:

Beat the Yogurt in a bowl until it becomes smooth and creamy. Gradually add 1 tablespoon of powdered sugar to the beaten yogurt. Mix Well. Mix the yogurt and sugar mixture until well combined and smooth. Add pinches of salt to the mixture and stir well. Taste the dip and adjust the sweetness or saltiness according to your preference. Refrigerate the dip for at least 30 minutes to allow the flavors to meld together. You can also serve with your favorite mint chutney and tamarind chutney.

To assemble the dish, place a dollop of sweetened curd in a serving dish, followed by a prepared kachori. Sprinkle a pinch of red chili powder, and a pinch of roasted cumin powder. Garnish with pomegranate pearls. Enjoy this delicacy! 😊
