Stuffed Crepes with Sauce

These crepes are stuffed with top sirloin beef tips, mushrooms and added sauce.
Here are the ingredients:
Crepes -
1 1/4 cups all-purpose flour (sift then measure)
3 large eggs at room temperature
1 1/2 cups half and half at room temperature
1/4 teaspoon salt
1/2 teaspoon Old Bay Seasoning
2 tablespoons butter, melted and cooled
1 tablespoon flat leaf parsley

Filling -
1 lb. top sirloin beef tips
Flour for dredging
Salt to taste
8 ounces slice mushrooms
1 medium onion
Cooking sherry
Sour cream
Water
