蜜餞金蠔 Honey Semi-Dried Oyster #賀年菜 #ChineseLunarNewYear #簡易宴客菜

今天煮“蜜餞金蠔”, 8只金蠔250克,蜂蜜會用多些少, 大約5湯匙(根據自己的口味調整), 一些芫荽和蔥, 1粒乾蔥1粒蒜頭, 1薑片, 一些炒過白芝麻。洗淨芫荽和蔥, 洗淨金蠔, 金蠔的這一部分是內收肌, 它是肌腱狀的結構, 質地堅韌, 如果請客,最好將其去除, 一家人吃飯留下也沒所謂, 洗完的金蠔用生粉(澱粉)進一步清潔。先煮一下蠔, 這是清水, 可以用雞湯代替水, 如用雞湯要注意, 湯有鹹味, 調味的時候要扣減鹹味, 一個蔥結, 1薑片, 些少冰糖, 將它們全部倒入鍋中, 放入洗淨的金蠔, 水位到蠔面, 加蠔油 1〜2湯匙左右, 少許酒, 如果喜歡顏色深一些, 加入適量的老抽, 煮沸後轉小火煮10分鐘, 我已經轉了小火, 金蠔不適合煮太久, 煮太久或煮太猛火會破裂。 煮了10分鐘, 將蠔夾起, 讓它吹凍風乾2〜3小時, 剩下的煮蠔水可用於烹飪其他菜餚。 5湯匙蜂蜜(根據個人喜好更改份量)。 鍋不需要燒太熱, 蠔之前用糖煮過, 太猛火會黐底和易燶, 煎至金黃反轉,另一面變也金黃色取出, 倒入切碎的蔥,蒜和薑爆香, 1/2湯匙生抽, 加一湯匙紹酒, 加入5湯匙蜜糖, 翻炒,把醬汁拌勻, 冒泡時加入金蠔, 金蠔吸收蜜糖, 加入切碎的蔥, 切碎的芫荽, 稍微炒一下, 加入芝麻完成, 這隻碟上蠔不好看 轉一隻碟, 讓我試一下。
Today the dish is "Honey Semi-Dried Oyster", 8 semi-dried oysters weigh 250g, honey 5 tbsps, much more amount, adjust according by self taste, some coriander and green onions, 1 shallot 1 clove garlic, 1 ginger slice, some fried white sesame, rinse the coriander and green onions, chop the coriander, reserve the stem and chop the green part of the green onion, chop the ginger slice, chop the shallot, chop the garlic clove, wash the semi-dried oysters, this part of the oyster is the adductor muscle, it is a tendon-like structure, the texture is tough, best to remove it if you stand treat, it doesn't matter if for family gathering, pour in 2 tbsp cornstarch after rinsing for further cleansing the sticky dirts. slightly cook the oysters, this is water, chicken broth can be used instead of water, note if use chicken broth, the broth is salty, keep in mind this salty taste to use less salt during the flavoring later, there are the green onion stems,1 ginger slice, some crystal sugar, pour them all in the pot, put in the cleaned semi-dried oysters, keep the water level above the oysters, add in oyster sauce, around 1~2 tbsp, moderate amount of cooking wine, if prefer darker colour, add moderate amount dark soy sauce, turn to low heat cook for 10 mins after boiled. it's turned to low fire, the oysters is not suitable for long cooking time, too long or high heat will cause the body to burst. it's cooked for 10 mins, grip the oysters onto the grid, let them to cool down to air-dry for 2~3 hrs, the sauce left can be used for cooking other dishes. 5 tbsp of honey, amount can be altered according to personal favour. no need heat the pan too hot, the oysters have become sugary after the cook, too hot will cause oyster sticky and easily scorched, reverse them after one side has become golden brown colour, the other side becomes golden brown colour, grip them from the pan, pour in the chopped shallot, garlic and ginger, stir-fry till fragrance bursts, add in soy sauce 1/2 tbsp, add in 1 tbsp cooking wine, add in the 5 tbsp honey, stir fry to mix the sauce well, add in the oysters while the sauce is bubbling, after the oysters absorb well the honey sauce, add in the chopped green onions, chopped coriander, slightly stir-fry the stuff, add in the fried white sesame, dish done. I change the oysters to another plate for good looking, let me taste it.
