WW2 British Ration Recipe - Homity Pie - Mashed Potato, Red Onion, Peas and Cheddar Cheese In A Pie

I learned about homity pie in a shop window in Bath, England. I took not one photo but three. When I got home I looked for a recipe and found that there is only one constant element, mashed potatoes. Everything thing else is up for grabs. So here is the recipe I developed that matches the one in the shop window. Give it a try and see if you love hominy pie.

Crust:
Blend 1/2 cup butter with 1 1/2 teaspoon sugar and 1/2 teaspoon salt. Then add 1 1/2 tablespoon milk and 1 egg yolk. Blend some more and then add 1 cup flour. When it comes together wrap and chill for 1 hour.

Roll out and line individual pie tins.

Filling
Boil 3 potatoes until tender. Drain and mash with 1/3 cup sour cream.. Add to it 3/4 cup peas, 1/2 of a red onion chopped and 3oz of grated cheddar cheese, 1/2 teaspoon salt and 1/4 teaspoon pepper. Combine until everything is well distributed. Fill the pie tins with a mounding dome of the filling and top with more cheddar cheese. Bake at 380° for 50 minutes.
