WHAT MY KIDS EAT IN A DAY - Day 7

Breakfast: Baked Peach French Toast
Ingredients
1 French bread 🥖 (day-old preferably)
4 eggs
2 cups milk
2 tablespoons maple syrup
2 teaspoons vanilla extract
Cinnamon
1 large peach, sliced

-cut the French bread to 1” cubes. Mix together the eggs, milk, maple syrup, vanilla extract and cinnamon. Spray a baking dish and add the bread cubes. Pour the milk mixture over it. Give it a quick toss with your hands. Let this sit for 20 minutes (tossing halfway so all the bread cubes are soaked) or you can refrigerate overnight.

When you are ready to bake, preheat the oven to 375F. 2 tablespoons butter, melted
1 tablespoon maple syrup
Vanilla and cinnamon
-mix together

Add the peach slices on top, drizzle with the butter mixture and cover with aluminum foil. Bake for 20 minutes. Remove the foil and bake for another 10 minutes. Add powdered sugar and serve with maple syrup and whipped cream.

Smoothies: 3/4 cup milk, 1 packet frozen açaí, 1/2 cup frozen mango, 1/2 cup frozen cauliflower, 1 banana, 1 tablespoon hemp seeds and 1 teaspoon bee pollen (optional). Blend until smooth.

Lunch: Cheddar Chicken Burgers and Baked Sweet Potato Fries.

Cut your sweet potatoes to fried and toss with olive oil (1 tablespoons oil per potato) and 2 tablespoons cornstarch. Season with salt, pepper, garlic powder and onion powder. Add to a parchment paper lined baking sheet. Bake at 400F for 20 minutes, flip and bake for another 20 minutes.

Divide 1 lb ground chicken to 4 patties, wet your hands if it gets too sticky. Season both sides with salt, pepper and garlic powder. Add some oil to a hot pan and cook for 5 minutes on each side or until the internal temperature reaches 165F. Add some cheese, I used freshly grated medium cheddar. Melt some butter and add your burger buns for about 1-2 minutes. My kids like these plain, feel free to add ranch, ketchup etc.
