Day 32 recipes

Breakfast: Tater Tots Waffle Sticks

This amount will differ depending on how many you will be making, but you will need 5 tater tots per stick. Alternatively, you can fill the entire waffle maker to make a whole waffle. Just be sure that the frozen tater tots are thawed. Heat your waffle maker to the highest setting and give it a spray. Place 5 tater tots in a row into the waffle maker. Close the lid and gently push it down to make sure it closes. Cook this for about 5-7 minutes until crispy. The timing will differ depending on your waffle maker. Gently remove and place on a cookie rack for a few minutes before serving.

Scrambled Eggs with Cheese
Into a bowl, crack 4 eggs, add a pinch of salt and pepper, 2 tablespoons of milk and whisk. Melt some butter into a pan and cook the eggs on low heat setting. Gently move it around with a spatula. After 3 minutes, add 2-3 tablespoons of shredded cheese (or to taste). Cook for another 3-4 minutes and remove from pan.

Smoothies: Add 1 cup of orange juice and 2 handfuls of spinach (1/2 teaspoon green spirulina, optional). Blend for about 30 seconds. Add 1 cup frozen cauliflower, 1 frozen banana, ¾ cups frozen peach and ¾ cups frozen pineapple. Blend until smooth.

Lunch: Garlic Texas Toast Pepperoni Pizza

Garlic butter (you probably won’t use the whole thing)
2 sticks butter, at room temp
4 garlic, minced
2 tablespoons parsley, minced
Pinch of salt

-combined the ingredients until they are mixed well.

Preheat oven to 425F
Spread some of the garlic butter on 4 slices of Texas toasts. Bake in the oven for about 4 minutes. Then add some marinara sauce, shredded mozzarella and pepperoni on each of the toast and return to oven for about 4 minutes or until the cheese has melted.

Dinner: Miso Glazed Salmon
½ cup white miso
¼ cup sake
¼ honey
1 tablespoon grated ginger
4 (6 oz) salmon fillets

- combined the first 4 ingredients and whisk until there are no more lumps. Place the salmon fillets in a Ziploc and pour the marinade, making sure the salmon are covered with it. Refrigerate for at least 1 hour (I let mine marinate for about 4 hours).

Preheat your broiler and remove the salmon 15 minutes before you cook it. Place the salmon on parchment paper lined pan and brush some of the marinade on the salmon. Broil for 10-12 minutes.

My husband and I really liked this but the kids weren’t too enthusiastic about it. The flavor might be a little too much for them.

Sesame Sushi Rice
2 ½ cups broth
2 cups sushi rice, rinsed thoroughly
1 tablespoon rice vinegar
1 teaspoon salt
1 tablespoon sesame oil
1 tablespoon sesame seeds
Green onion for garnish

-Combine the first 4 ingredients, let it come to a boil, lower the heat to low, cover and cook for about 15 minutes. Remove rice from heat and let it sit for another 10 minutes. Add the sesame oil, sesame seeds and green onion, and stir together. Garnish with more green onion.

Garlic Butter Broccolini
Add your broccolini into some boiling water and cook for about 3-4 minutes. Remove and immediately give it a cold water bath (water with ice cubes). We are blanching this to keep them bright green and not mushy. Add 3 tablespoons of butter into a pan and add 4 cloves of minced garlic, cook for a minute. Add the broccolini and add some salt and pepper. Toss together and cook for about 2-3 minutes.

Dessert: Cinnamon Toast Crunch Treat
1 (10 oz bag) mini marshmallows + 1 cup
4 tablespoons butter
1 teaspoon vanilla extract
5 cups Cinnamon Toast Crunch cereal.

In a big pot, melt the butter. Let this browned for about 4 minutes but be careful not to burn it. Add the 10 oz bag of the marshmallows only (reserve the 1 cup). Add the vanilla extract and let the marshmallows melt completely. Remove from heat and add the cinnamon toast crunch and gently fold. Once it is incorporated, add the 1 cup of marshmallows, give it another fold and transfer to a parchment paper lined pan. Using a slightly wet spatula (or your hands), gently press it down. Give this at least 30 minutes before cutting into it. When cutting, it helps if your knife is a little wet. Place in a airtight containers, good for a couple of days (if they last that long)
