DAY 39 RECIPES
BREAKFAST: SHEET PAN PANCAKES

Ingredients:
Wet ingredients
2 eggs
1 teaspoon vanilla
2 cups buttermilk
4 tablespoons butter, melted

Dry ingredients
2 cups all-purpose flour
¼ cup sugar
2 teaspoons baking powder
1 teaspoon baking soda
Pinch of salt

More melted butter for brushing

Directions
Preheat oven to 400F

In a large bowl, add the wet ingredients and whisk. Add the dry ingredients and fold gently. Mixture will be lumpy and thick.

Add parchment paper on a large baking sheet, brush with some melted butter. Add the pancake batter and spread evenly to cover the entire surface of the baking sheet. Bake in the oven for 15 minutes. Brush with melted butter. The original call for broiling it for a few minutes, but I don’t think is necessary.

Served with: yogurt, maple syrup, powdered sugar, berries, chocolate chip et.
LUNCH: CHICKEN PESTO PULL APART SLIDERS

Ingredients:
Note: the amount is just a suggestion, please adjust to your liking.

Hawaiian rolls (12 pack)
Pesto (I used about 1/3 cup, but spread as much or as little as you like)
2½ cups rotisserie chicken, shredded
Mozzarella cheese, enough to cover the entire surface (about 2 cups-ish)

3 tablespoons butter, melted
½ teaspoon garlic powder
½ teaspoon oregano

Directions:
Preheat oven to 375F

Using a serrated knife, cut through the middle of the rolls and place the bottom part in a large baking dish that has been sprayed or lined with parchment paper. Spread the pesto, then the chicken, top with mozzarella cheese covering the entire surface. Don’t be shy…add more cheese. Next, place the top part of the rolls directly on top then brush with the melted butter, garlic powder and oregano. Cover with aluminum foil bake for 30 minutes or until the cheese has completely melt.

SMOOTHIES
In a blender add ¾ cup each of milk, frozen cauliflower, frozen pineapple, 1 frozen banana and 1 packet of frozen dragon fruit. Blend until smooth.

DINNER: HONEY SESAME SALMON BITES

INGREDIENTS
Marinate
1 ½ lb. salmon, remove the skin and cut into bite sized pieces
1 teaspoon salt
½ teaspoon white pepper
½ teaspoon ginger powder
½ teaspoon garlic powder
1 teaspoon sesame oil

Sauce:
1/3 cup sweet chili sauce
1/3 cup honey (less if you don’t want it as sweet)
1/3 cup water
¼ cup rice wine vinegar
2 tablespoons soy sauce
1 teaspoon sesame oil

Batter
2 eggs
½ milk (preferably buttermilk)

1 ½ cups all-purpose flour
Seasoning: 1 teaspoon each salt, pepper, ginger powder, garlic powder and ½ teaspoon white pepper.

6 cloves garlic, minced
1 tablespoon ginger, grated

Cornstarch slurry
1 teaspoon cornstarch
2 teaspoons water
Oil for frying (I use peanut oil)

Directions
Combine the marinate ingredients in a large bowl and toss to combine. Let this sit for at least 15 minutes, longer if you have the time.

Combine the sauce ingredients and set aside.

In a shallow dish, whisk the eggs and milk together. In a different shallow dish, combine the flour and seasoning, whisk to combine.

Next, add the salmon bites into the egg mixture, then the flour, back to the egg mixture and to the flour again. We are double dipping it here. So, egg – flour – egg – flour. Heat the oil and carefully fry the salmon bites in batches for 3-5 minutes. Once all the salmon bites have been fried. Discard all but 1 tablespoon of oil (please don’t dump the hot grease down the sink). Add the garlic and ginger, sautee for about 1 minute. Now add the sauce and this cook for about 2-3 minutes, add the cornstarch slurry and let the sauce thickens. Turn heat off and add the salmon bites. Toss to make sure the salmon bites is coated with the sauce. Drizzle with a little sesame oil, green onion and sesame seeds. Serve with rice, of course.
DESSERT: Hasselback Apple with ice cream
