CHORIZO MAC N CHEESE 🧀
Comfort food at its finest, nothing quite beats a bangin' mac and cheese, and our chorizo one from our new book MEAT really takes the top spot! Tailor-made for cosy nights in, make sure you give this a go this weekend!

INGREDIENTS
2 echalion shallots
2 tsp sea salt
1 tbsp olive oil
2 tsp garlic puree
220g plant-based
chorizo sausages
1 tsp smoked paprika
500g macaroni pasta
20g plant-based butter
40g plain flour
500ml unsweetened oat milk
200g plant-based grated cheddar
10g nooch
2 tbsp olive oil
50g breadcrumbs
pinch of sea salt
1 tsp ground black pepper
1⁄2 tsp smoked paprika
METHOD
Cook the chorizo • Peel and thinly slice the shallots • Place in a colander and season with salt • Warm the olive oil in a high-sided frying pan over a medium heat • Add the shallots and garlic puree and stir for 1 minute • Crumble the chorizo sausages into the pan (removing the skin) and fry for 5–6 minutes • Sprinkle over the smoked paprika then set to one side
Fry the breadcrumbs • Warm the olive oil in a small frying pan over medium heat • Add the breadcrumbs, salt, pepper and smoked paprika and fry for 4–5 minutes until golden and crispy • Set to one side
Cook the pasta • Cook the pasta according to the packet instructions
Make the cheese sauce • Add the butter to a pan and melt over a medium heat • Sprinkle the flour into the pan and stir to make a roux • Add the oat milk, stirring constantly, until gently simmering and cook until thickened • Add the plant-based cheese and nooch and stir until melted
Finish and serve • Add the cooked pasta and chorizo to the sauce and combine • Sprinkle over the breadcrumbs and roast for 10–15 minutes in the oven until bubbling (if you don’t have an ovenproof high-sided frying pan, transfer the mixture to a baking dish before sprinkling over the breadcrumbs) • Serve immediately with a little side salad
