CHICKEN FAJITAS RECIPE
• 3 lb. Chicken cutlets, thinly sliced, then diced
• 3-4 Tbsp. Extra virgin olive oil
• 8 Bell peppers, seeds removed (2 yellow, 2 red, 2 green, 2 orange)
• 2 medium Onions, cut into strips
• 2 Bouillon cubes, dissolved in 2 cups of warm water
• 2 cups water
• Salt, to taste
• Black pepper, to taste
DIRECTIONS:
• Drizzle 3 Tbsp. extra virgin olive oil into a pot on medium heat
• Add sliced peppers and cook 2-3 minutes, until soft
• Add onions, cover and cook for 10-15 minutes, stirring occasionally
• Add ½ Tsp. salt, and ½ Tsp. black pepper
• Dissolve bouillon cubes in hot water, and stir liquid into pepper and onion mixture
• Let cook 5 minutes
• Add chicken
• Cover and cook on medium-high heat for 15 minutes, stirring occasionally
• Lower heat to medium-low and continue to cook an additional 10 minutes
