Healthy Breakfast Muffin Recipe

Hi Guys, today I’ll show you how to make Morning Muffins. These are nutritious, healthy and have a good amount of fiber.

They are not just for breakfast but also great as a snack. It’s a simple recipe you can make without pulling out your mixer.

Heat your oven to 350 degrees Fahrenheit. Line a muffin tin with paper liners. This recipe will make 18 muffins. We’ll need 1.5 cups each of grated carrots and apple. I used 3 carrots and 2 small apples. ¾ cup chopped walnuts, ½ cup of sweetened coconut, 2 large eggs, ½ cup of vegetable oil, ½ cup of blackstrap molasses, 1 tsp vanilla extract, 1 tsp ground cinnamon, 1 cup all purpose flour, ¾ cup whole wheat flour, 1 tsp baking powder, ½ tsp baking soda and ½ tsp salt.

In a bowl, add 1 cup all purpose flour, ¾ cup whole wheat flour, 1 tsp baking powder, ½ tsp baking soda and ½ tsp salt, 1 tsp ground cinnamon. Mix this well.

To the oil, pour in ½ cup of molasses. This blackstrap molasses is high in potassium and iron, very healthy. 2 eggs and 1 tsp vanilla extract. Whisk this really well.

Add the wet ingredients to the dry. Mix well. Now add the grated carrots and apple, coconut. Give this a mix. Now add the chopped walnuts and stir. It’s time to bake these.

I like to use an ice cream scooper to put the batter into the liners so they’ll all be the same size
Bake for 20 to 30 minutes. Check after 20 minutes. If a toothpick inserted into the middle of the muffin comes out clean or with a few crumbs, it’s cooked. Cool the muffins completely on a wire rack.
