Thieboudienne Ingredients
Ingredients for the roff:
Parsley
Garlic
Hot pepper/Habanero
Onions
Salt
Ingredients for the Thieb:
Fish, preferably Thiof/Merou/Grouper or Big Red Snapper/Barakuda
Olive oil
Rice (1.5 cup Water to 1 cup of Rice)
Tomato paste
Yete
Guedji
Bay leaves
Salt
Lemon juice for seasoning the fish
Olive oil: for every 1 Kilo of rice you can use a quarter liter of oil
Tomato paste: for every 1 kilo of rice you can use 400 grams of tomato paste. Preferably 100% broken rice.
Use vegetables of your choice, the ones in the video are the preferred vegetables of Senegambia for Thieboudienne except the broccoli.
The GUEDJI and YETE are the 2 ingredients that give a unique aroma/taste to our famous Thieboudienne.
