How To Identify White Sweet Clover, Melilotus alba

White Sweet Clover is a rather unique plant that is often grown for honeybees to use as forage, but it's also edible! We'll take a look at the identification features of this plant in this video. There are numerous spikes of white flowers at the top of the plant that are usually loaded with honeybees. With it's alternate leafing pattern and trifoliate leaves, like other clovers, this plant can grow up to 6 or more feet tall. Blooming in the summer and often growing on the edges of wood lines, fields, clearings, and roadsides, the White Sweet Clover has several culinary uses. The edible leaves contain vanillin, the main chemical in vanilla beans, giving them a nice vanilla like flavor. These leaves can be used for tea or for flavoring things like baked goods. The flowers themselves are quite delicious brewed into a tea and go really good with the leaves for a florally vanilla like beverage that is great on a hot summer day.
