Steamed fish and okra is one of the more popular dishes to cook here in Jamaica and I decided to do some outdoor cooking with a little twist, RUM. For this dish you can use whatever vegetables you prefer to steam your fish, feel free to tweak it, it may not be traditional Jamaican cuisine anymore, but once you have fun cooking and eating it, thats all that matters. For me, adding rum and flambéing the dish added a new flavour along with the sweet orange juice.
