Jamaican and African culture is closely knit and I found that it was time to finally try some African food. Now the fastest and cheapest way to travel is through food. So until I go to Africa, I'll do some outdoor cooking on this popular Nigerian dish of Okra soup and fufu. We were luck enough to have other Jamaicans stop by and try African food with a Jamaican twist.

Instructions:

Sauté chicken thighs

Render off salt from pork (Add a Little water, cover and leave for about 15 mins. Remove salt particles)

Then add coconut oil, Rosemary, scotch bonnet, ginger and garlic paste. Homemade seasoning and black pepper, red herring, diced red onions. Let flavours combine

Add crushed tomatoes, let simmer to lose moisture in tomatoes.

Add some water to original tomatoes paste pot to full cook chicken. When cooked add shrimp. Check salt content

Add okra mixture to chicken stew pot. Cook in short and mix ingredients in. Then add red onion, take off heat for residual heat to cook onions.

Making Okra slime

Chop okra into small pieces. Add to pot with water, baking soda. Let boil. Then beat to let slime come through.

Add callaloo to hot okra pot, take off heat, toss red bell pepper in.
