DINNER: creamy chive chicken with lemony rice & dijon apple salad
1 lemon
1/4 oz chives
1 apple
1/2C jasmine rice
2 tsp dijon mustard
10oz chicken cutlets
1 chicken stock concentrate packet (I find mine at sprouts)
2tbsp sour cream
2oz mixed greens
Sugar 1/2 tsp
Avo butter 1 tbsp
salt and pepper
olive oil
PREP:
- zest and quarter lemon
- mince chives
- halve and core apple; thinly slice into triangles
RICE:
- combine rice, 3/4 cup water and a pinch of salt
- bring to boil, then cover and reduce to low simmer
- cook until rice is tender, 15-18 minutes
- fluff rice with fork; stir in 1 tbsp butter and lemon zest
- season with salt and pepper
SALAD DRESSING:
- combine 1 tbsp olive oil, juice fro half the lemon, 1 tsp of dijon mustard, 1/2 tsp sugar, salt and pepper, stir in half the chives
SALAD:
- add mixed greens, dressing and sliced apple to bowl; toss to combine
CHICKEN:
- pat chicken dry with paper towels. season with salt and pepper
- heat a drizzle of olive oil in a large pan
- add chicken and cook over med-high heat 3-5 minutes per side
CHICKEN SAUCE:
-heat pan over med-high heat
- add stock concentrate, 1 tsp of dijon mustard, 1/4C water, squeeze of lemon juice
- simmer until slightly thickened, 1-2 minutes
- turn off heat; stir in sour cream and remaining chives
- season with salt and pepper
