Valentine's Day Cook With Me

Stuffed Pork Tenderloin
Filling; combine ingredients in bowl
-1 cup whole Ricotta
-1 clove garlic grated
-zest of lemon
-juice of half of a lemon
-salt/pepper to taste
-1/4 cup Parmesan cheese

-2 Pork tenderloin filet open to make flat. Place half of filling on meat.
-2 oz fresh spinach divided evenly over each pork loin
-salt/pepper to taste

Roll pork tenderloin and secure with kitchen twine.
In heavy fry pan, add a couple tablespoons olive oil and sear tenderloins on all sides. Then place entire pan in 450 degree oven. Turn tenderloins every ten minutes or so, until internal temperature is 145 degrees. Remove tenderloins from oven and let rest before cutting into medallions. Meanwhile, place fry pan over medium heat, add a chopped shallot and cook until tender. Add a tablespoon of Better then Beef Bouillon paste and a cup of water. Add a cup of red wine and let reduce by half. Add one tablespoon cold butter and stir until incorporated into serve. Strain sauce through sieve.
