GINGERBREAD RECIPE:
** Note: to make all the houses in this template, you'll need to double the recipe below! **
Ingredients:
350g (12 oz) plain flour
1 teaspoon bicarbonate of soda
2 teaspoons ground ginger
115g (4 oz) butter, cubed
175g (6 oz) soft light brown sugar
4 tablespoons golden syrup
1/4 tsp nutmeg
1 tsp cinnamon
1 egg, beaten
Method:
1. Preheat the oven to 190 C
2. Sift the flour, bicarbonate of soda, ginger, cinnamon and nutmeg into a bowl. Rub in the butter with your fingertips until it resembles coarse breadcrumbs; stir in sugar
3. Beat syrup into egg, then stir into dry mixture
4. Knead the dough until smooth. Place template pieces on top and cut around with a knife
5. Bake in the preheated oven until golden and puffed, about 8-10 minutes. Let them sit on the tray for a few minutes before moving to a wire rack
6. Cool completely before decorating with icing
Tip: if you'd like to cut out windows/doors so you can see inside the houses, cut the desired shapes before baking but DON'T remove the dough. Bake with the cut lines as is then as soon as you remove the finished cookies from the oven, go over the lines again with a sharp knife and remove the window/door pieces you'd like. This stops the window/door lines from puffing out, as you can see in this example here:
