Mini Paleo Pumpkin Pie Recipe *Made with Collagen Peptides* *Gluten/Dairy Free*
These Mini Paleo Pumpkin Pies are DAIRY FREE & GLUTEN FREE! I also added COLLAGEN PEPTIDES to make them more nutritious. The recipe is listed below, if you make these don't forget to tag me on Instagram @cassxr_
RECIPE:
The Filling-
*1 cup Pumpkin Puree
*1/4 cup Maple Syrup
*2 tbsp Plant Milk (I used Oat Milk)
*1 Full Egg + 1 Egg Yolk (room temp)
*1 tsp Vanilla extract
*1 tsp Pumpkin Pie Spice (or AllSpice)
*1/4 tsp Nutmeg
*1 tsp Cinnamon
*1/4 tsp Ground Ginger
*3 servings of Collagen Peptides (I used Dose & Co, I've also made the recipe using Vital Proteins Collagen Peptides)
*2 tsp Arrow Root Starch/Flour (I used Bobs Red Mill)
Whisk together all Ingredients in a mixing bowl, set aside and then prepare crust.
The Crust-
*1/4 cup Coconut Oil (melted & cooled)
*1/4 cup Sugar (I used Cane Sugar)
*2 tbsp Honey or Molases
*1 tsp Baking Soda
*1 Egg (room temp)
*1+1/4 cup Almond Flour
*1/4 tsp Cinnamon
*3/4 tsp Ground Ginger
*1/2 tsp Pumpkin Pie Spice (or AllSpice)
*1/4 tsp Salt
Combine all ingredients in a large mixing bowl. Form a dough, then press into greased muffin tin to form a crust. Pre-Bake crust on its own for 5 minutes at 350 Fahrenheit. The crust will have puffed up, it is not fully baked at this point so you can gently press it back down to make room for the pumpkin filling. Spoon in your filling then bake for another 25 minutes.
Allow your mini pumpkin pies to cool for 20-30 minutes, then enjoy on its own or with Coconut Whip Cream!
Coconut Whip Cream Recipe-
*1 can Coconut Cream
*1/4 cup Maple Syrup
*Pinch of Salt
*Optional: Pumpkin Pie Spice
Whip all ingredients together with a whisk or hand mixer until you get desired consistency, then pop into the fridge for 10 minutes.
