फिश अंगारा की करारी रेसिपी चखकर आप इसके दीवाने हो जाएंगे | Fish Angara recipe by Chef Ashish Kumar

Angara Fish Cooking Steps:
For this recipe, we need Red chili whole 4-5 pieces or as per taste Take 4 tablespoon of black mustard seeds, 3 tablespoons of coriander seeds, Soak in water for 3-4 hours, Spices are soaked, now grind these into a fine paste. I am using conventional Indian grinding stone, you can use an electric blender as well. Start with a small quantity and add more gradually. Grind 50 grams of garlic cloves with the rest of the spices. Make spices as fine as possible. Masala is ready, now take it out in a bowl. Add half teaspoon of turmeric powder, Add one tablespoon of Kashmiri chili powder but it is only for color and optional. Add salt as per taste, Add lemon juice from half a lemon, Mix well. Add a dash of mustard oil and mix again. Our fish marinade is ready. I am using red pomfret for this recipe. It is already descaled and cleaned. Wipe this with a paper towel. Make few slashes until bone so that marinade could reach in deep. Rub the marinade on fish. Fill cuts, cavities, etc. Cling wrap or keep it in an airtight container in the refrigerator for 3-5 hours. For better result leave it in the refrigerator overnight. Fill the chimney starter with charcoal. Double click to edit I am using the lighter blocks to burn the coal. It is very windy outside so I am adding a few camphor tablets. Put Charcoal filled chimney on fire. Leave it for 30 minutes. Pour burnt charcoal on the below tray. Place marinated fish 10 inches away from charcoal. After 5 minutes, flip and baste with mustard oil. Roast 5-7 minutes and flip again. Baste with mustard oil the other side also. Roast extra 3 minutes from both sides if you like a more crispy texture. Pomfret is roasted nicely and ready to serve. Let's cut and check it from inside. Fish Angaara is ready to relish.
