भुना गोश्त : भारतीय मांसाहारियों की एक बड़ी कमज़ोरी | Bhuna Gosht Recipe by Chef Ashish Kumar
Today's recipe is a versatile dish whose flavors can be eaten as a starter, as well as the main course. This is Bhuna Gosht recipe which is very popular in India and its neighboring countries. It is said that a good Bhuna Gosht is made with utmost efforts in addition to the ingredients as its true taste comes out after it has been fried for a long time. The importance of this dish can be gauged from the fact that it holds its place in the list of 5 favorite dishes of mutton lovers. So let's start Bhuna Gosht's delicious recipe.
Cooking Steps:
For Bhuna Gosht, we need 500 grams of goat meat. You can use lamb as well. These are two medium-sized onion cut into slices. Dry roast, 1 tablespoon of coriander seeds, a half tablespoon of cumin seeds, 6-7 pieces of peppercorns, 4-5 pieces of cloves, a piece of black cardamom, 2 pieces of green cardamoms, a piece of cinnamon, 3-4 pieces of whole red chilies, Dry roast for a minute at medium flame until these releases a smoke, Transfer dry roasted spices in a grinder, make a fine powder. It is our Bhuna Masala. Pour quarter cup mustard oil/ ghee/vegetable oil in a hot and heavy utensil. I am using mustard oil. Add the sliced onion in hot oil, fry until golden color, add 2 tablespoons of ginger garlic paste, Fry for 2 minutes at medium flame. Add mutton pieces, Add salt as per taste, Mix well and fry for 2 minutes at medium flame, Cover the lid and cook for 5-7 minutes at low heat. Add dry roasted spice mix (Bhuna Masala). Add a teaspoon of turmeric powder, Mix well. Cook for 3-4 minutes at medium heat. Add half cup of water, mix well and cook for another 2 minutes. Cover the lid and cook for 5 minutes at low heat. Stir well. Add one glass of water, Mix well and increase the flame until a boil. Cover the lid and cook for 30 to 40 minutes until mutton tenderizes. Mutton is cooked, now reduce the gravy at high flame, Add 200 grams of whisked curd. Mix well and keep cooking at high flame, Cook approx for 10 minutes at high flame, Keep stirring until curd releases its oil. Reduce and convert it as dry Bhuna Gosht as a starter dish or thick gravy Bhuna Gosht to enjoy with your favorite piece of bread. I am making dry Bhuna Gosht which done. Serve hot! Garnish it with coriander leaves.
