Curried MANGROVE CRABS (Mud Crabs) & Dumplings (Cleaning Included)
Curried Crab and Dumplings (Crab and Dumplin') is a signature Tobagonian dish fusing our Indian and African heritages. The crabs are locally caught from the mangroves and sold in bundles. Today, I bought 3 bundles (12 crabs) for $180 TTD.

INGREDIENTS
*12 Mangrove Crabs- cleaned and washed with baking soda + lime juice + warm water. Crack the gundies (claws) before seasoning.
*Green Seasoning- 20 cloves of garlic, 1/2 scorpion pepper (optional), hot peppers, 8-10 bandhania/chadon beni/culantro leaves, 5 pimento/seasoning peppers.
*Spice Mixture- 2 tablespoons of curry powder, 2 teaspoons black amchar massala + 2 teaspoons roasted ground geera + 1 teaspoon turmeric powder.
(Use less or more depending on your preference) + 1/4 cup of water.
*1 tablespoon of oil + 1 onion + 6 cloves of garlic, minced + hot peppers + pimento peppers + curry leaves + 1 teaspoon mathee (fenugreek) seeds + sprig of thyme.
*Salt (your preference).
*8-10 bandhania/chadon beni/culantro leaves + 5 stalks of chive/scallion.
*Dumpling dough- 5 1/2 cups of flour + 2 cups of coconut milk (or 1 pack of coconut milk powder dissolved in 2 cups of water) + 1 tablespoon of salt + 1 1/2 tablespoon of sugar + extra water to make a smooth dough.
